Who are you and what is your business? Jack Harper of Taravale Flour & Lamb. We provide grass-fed nutrient dense lamb and wholegrain wheat flour.
Where did you begin? We have been farmers for generations out of Ariah Park. My dad found a niche market in not quite organic but regenerative farming and quality produce.
What do you produce? We produce grass-fed lamb that’s all but chemical free. No synthetic fertilisers and no vaccine. Our flour is Roundup free and doesn’t contain glyphosate. It’s stone ground, milled and packed on farm. The flour is all around multipurpose … you can cook anything from cakes to flatbread or sourdough.
Where can we buy your products? Every Thursday at the Riverina Producers Market. Every month at Wollundry Saturday Markets and we’re also in the process of setting up a website.
What should we buy for gifts this Christmas? We’ve got a new product … we do lamb ham. Instead of your traditional pork and ham everyone has for Christmas … it’d be a good changeup. Our lamb roasts are as good as anything.
What’s your favourite product that you make? The loin chops and I’m also a big fan of the rump roasts which serves about two people.
What would you make if you could do anything? Eventually get into selling some breads and sourdoughs made out of flour.
How would you promote the Riverina? Small town, good people and good community.
What’s your favourite coffee spot? Mr Lawrence in Wagga and Kayshe espresso in Temora.
Coolest local thing you’ve ever bought? Bought some nice paintings by local artists.
Who is another local producer you admire? Junee Licorice & Chocolate Factory.
What do you want for Christmas? A good harvest and spend time with family.
