Five minutes with Scott Hayman, Temora's Double Shot Coffee House & Eatery

Who is Scott Hayman? Someone who chases his dreams. Loves his coffee and cake. Always keen to experience new things.

Best recent dining experience: Just a few days ago, I ate breakfast at a French restaurant in Melbourne. I loved it so much I bought their book, telling their story and providing some of the recipes they use. I look forward to learning from them and incorporating some of their ideas into Double Shot.

Favourite cuisine: I love trying and experimenting with a variety of cuisine, but I often find myself returning to Indian cuisine. So many flavours in Indian cooking.

Most embarrassing pantry item: I don’t find it embarrassing, but people give me weird looks when they see how many different types of drinking chocolates I have.

What ingredient can I not live without? Coconut cream. It just goes so well in many recipes.

Best coffee spot in Temora: Totally biased here but definitely Double Shot! Art of Espresso coffee has a beautifully well-balanced profile. I wake up each morning looking forward to that smooth crema resting on my double-shot long black.

What’s your coffee blend? Art of Espresso. I’ve worked with them for years and hope to for many years to come. We use their Kombi Blend, and are slowly incorporating their Elephant Hills single-origin into our menu.

Next big thing in the Temore food scene: I look forward to the growth of restaurants for the evening dining scene.

A must-try on our menu: Our gluten-free banana bread, along with its slight variations – pineapple and coconut, pear and raspberry.

My biggest culinary influence: My mum. Her cooking has always surpassed that of most restaurants I’ve been to.

Favourite cookbook: An old Cookery Book compiled by The Country Women’s Association of NSW. There’s a bit of everything in there.

Who I admire in the Temora food and wine scene: Teresa McCrone. I moved back to Temora when I commenced work with her at Red Hen Hospitality and got to experience working with her at the Coffee House and her catering events. She always provides top-quality service and products and has helped me start my own cafe.

What are this week’s specials at Temora’s Double Shot Coffee House & Eatery? We don’t often have weekly specials, but the next thing to look for is a gluten-free flake cheesecake. It was a request from one of our youngest customers, and we look forward to creating this product.

My least favourite food: While I still desire to keep it on the menu, seafood is my least favourite food. My stomach does not like too much of it.

My top three cooking tips: Always follow a recipe as written the first time, then make your own adjustments. Keep your equipment and workspace clean. It makes any cooking experience much more enjoyable. Don’t be afraid to try something new.

Double Shot Coffee House & Eatery is located at 168 Hoskins St, Temora. It’s open from 6:30 am to 2:30 pm Monday to Saturday (closed Sunday).
