Who is Roslyn Mitchell?: Owner and proprietor of Mock Orange Cafe. I am a 55-year-old Waggarian and love my city. I lived in Sydney and after commuting for years decided to come back to Wagga and make a difference in my community. I’ve had a few personal tragedies. I lost my husband of 35 years three years ago. I had breast cancer. I’ve started life and created the most perfect business model.

Best recent dining experience: Mr Lawrence. Jamie Shepley is Wagga’s greatest chef.

Favourite cuisine: Australian fused everything.

Most embarrassing pantry item: Toffee apple lollipops.

What ingredient can I not live without? Potatoes.

Best coffee spot in Wagga: Clearly here (Mock Orange Cafe). My top five are Trail Street, Fitz Cafe, Mr Lawrence, Larry’s and Thorne Street Cafe.

What’s your coffee blend? The Cat’s Pyjamas.

Next big thing in the Wagga food scene: If we can solve the critical chef shortage there’s no holding Wagga back.

A must-try on our menu: The veggie fritters and trio of sliders.

My biggest culinary influence: I worked with some of the most amazing chefs in Sydney and learnt a lot from them.

Favourite cookbook: Jamie’s 15-Minute Meals.

Who I admire in the Wagga food and wine scene: Jamie Shepley, Tania Sibrey of Food I Am. Lily from Cottontails and a special shout-out to the Thorne Street boys.

What are this week’s specials at Mock Orange Cafe? We have some beautiful bruschetta, great pumpkin gnocchi and fritters.

Death row meal: Can’t go past Scottish mince tatties.

My least favourite food: Tofu.

My COVID-19 response: Hard. Hard. Hard! Proud of our community and I have to thank our customers. They made our business a successful one.

My top three cooking tips: Season, season, season every stage of the cooking, not at the plate. When dealing with pastries, follow the recipe. Get super prepared with everything.
