‘Riverina Made’ is a series showcasing all the region has to offer this Christmas, and we’re encouraging everyone to shop local. If you’re looking to spice up your Christmas dinner, Wayne and Carol have got you covered.

Who are you and what is your business? (Wayne) Wayne and Carol Manderson and we are the Big Boys Sauce Co.

Where did you begin? (Wayne) I began about probably 30 years ago just making it for myself and the family and just plodding along doing that for many years. Then when COVID came around, I was in lockdown for quite a while so I needed something to do and I had been told over the years I should be selling it, so I went down that line of trying to market it.

What do you produce? (Wayne) I produce the Big Boys Sauce, which is a fruity, spicy, sweet condiment that goes with meats of all sorts. The recipe came from my mother who got it off her uncle, so it’s probably at least three generations old. I used to go to my mother’s place while she was making it and so I thought I’d have a crack at it.

(Carol) The original name was ‘Mando’s’ (Wayne’s nickname), but we were told it was too close to Nando’s products. So I was just mopping the floor one day and I was thinking of a name for it, something like ‘sauce for men’ or ‘men’s hot sauce’ or something sort of masculine, and I just thought of ‘sauce for big boys’!

Where can we buy your products? (Wayne) We’re always at markets around the place and at the Farmer’s Market in Wagga every Thursday, and you can see where we’ll be from our Facebook. There are also lots of suppliers around the Riverina who sell our sauce.

What should we buy for gifts this Christmas? (Wayne) Well, you should buy some of the Big Boys Sauce for the men in your life!

(Carol) We’ve got a two-for-one special!

What’s your favourite product that you make? (Wayne) I only make one sauce because you can’t improve on perfection!

What would you make if you could do anything? (Wayne) Easy, the Big Boys Hot Sauce.

How would you promote the Riverina? (Wayne) It’s just an ideal area for putting out homegrown or homemade local products and promoting local producers.

What’s your favourite coffee spot? (Wayne & Carol) Jardine’s Cafe!

Coolest local thing you’ve ever bought? (Carol) The caravan!

(Wayne) Yeah the caravan, which, when we get away, we take the Big Boys Sauce with us and sell it on the road.

Who is another local producer you admire? Coolamon Cheese Factory, the Junee Liquorice Factory and the Dog on the Tuckerbox.

What do you want for Christmas? (Carol) A holiday!

(Wayne) Something I would want for Christmas would be just that everyone gets to have a good time and relax and enjoy it with their family and friends. Just get away for a while. Enjoy life.
