Who is Rea Brett?: I’m the owner of Merino Cafe and I’ve had the cafe for 14 years. We pride ourselves on baking all our own cakes and slices.
Best recent dining experience: The Hibernian Hotel in Goulburn.
Favourite cuisine: All cuisine.
Most embarrassing pantry item: Processed cheese.
What ingredient can I not live without? I cannot live without fresh herbs.
Best coffee spot in Gunning: The best coffee spot in Gunning would have to be Merino Cafe.
Next big thing in the Gunning food scene: Hopefully more commercial businesses are able to open and offer different dining experiences.
A must-try on our menu: Our homemade Lemon Meringue Cheesecake.
My biggest culinary influence: Probably Neil Perry.
Favourite cookbook: The Cook’s Companion by Stephanie Alexander.
Who I admire in the Gunning food and wine scene?: I admire David and Sue from the Telegraph Hotel for their bistro and the dinner they do.
What are this week’s specials at the Merino Cafe?: We didn’t have any specials this week because we were short-staffed. Last week we had asparagus bacon brie tarts with garden salad with our homemade dressing.
Death row meal: Lobster.
My least favourite food: Anything offal.
My COVID-19 response: I’m just glad everything’s back on again and people are getting back to normal.
My top three cooking tips: When making hollandaise sauce and it splits just add ice cubes and whisk well and the sauce comes back together. It’s a really good one because it is so easy to split hollandaise sauce. Cooking lamb in a water bath with diced up tomatoes and herbs will tenderise the meat more. Add vanilla paste to the pancake batter. It makes them nicer.
Merino Cafe is open seven days from 7 am to 4 pm. It is located at 62 Yass Street, Gunning.
